At the height of the truffle season, the brouillade aux truffes can be found in local restaurants. It is a beautfully rich mixture of scrambled eggs with grated truffle.
At the annual truffle festival in Aups- La Brouillade is served in the market square, with great debate on the best method.
For scrambled eggs with the best flavour, the precious truffles are cleaned and then stored in an airtight jar with the eggs overnight. This allows the truffles to add the maximum flavour to the eggs, before they are whisked and scrambled.
